Laurence has got it pretty much spot on. You can check the single room supplement on Alpharooms or Travel Republic but I think it's about an extra 15 euros per night. The rooms are nice and big so if you can find someone willing to share you will have plenty of space. Bikes in rooms is a real no no....

I seem to remember quite a few bamboo framed bikes at the national cycle museum in Wales. They must have been all the rage around the turn of the century, so much so that when steel became readily available some manufacturers mimicked the bamboo style!

Toby, I bought two alloy framed Ribbles about 5 years ago and they have been excellent for winter bikes and commuting. Ride quality fine and still going strong after quite a few thousand miles. As Tim says, they are very popular so beware making your decision on this small sample of opinions.
