Sounds like a cracking idea to me. 100 miles sounds about right, we had quite a few doing a century a couple of weeks ago.

I'd certainly be happy with a hostel and Brecon Beacons is easy to get to and not as lumpy as it sounds.

Andy, A Brevet Populaire is a shorter version of Audax, (less than 200km)

The type of event doesn't really matter unless your trying to qualify for Paris-Brest-Paris, or going for one of Audax UK's awards.
